Cooter Soup
preparation time: one hour
cooking time: two hours
Serves six to eight
1 large Yellowbellied Cooter
1/4 pound (125g) butter
1 cup chopped onion
1/4 cup flour
salt and pepper to taste
2 tablespoon fresh or dried thyme
1 teaspoon mace
1/2 cup sherry
1/4 cup brandy
1 bottle of vodka
1/2 cup of cream (optional)
Plunge the cooter into a large pot of boiling water and vodka and boil it for 1/2 hour, much as you would a crab, lobster, or small dog. Remove, drain and cool the cooter. Discard the water. Pry off the shell, remove the meat and chop it into small pieces. In a large heavy pan, melt the butter then add the onion and turtle meat. Saute for 10-15 minutes until the meat is well browned. Stir in the flour, salt, pepper, thyme and mace, along with about 2 quarts (2 liters) of water. Bring slowly to a boil, lower the heat and simmer for one hour. Stir in the sherry and brandy. If desired, and 1/2 cup of cream before serving.

Fried Soft-Shell Cooter
2 pound turtle (cut in 2-4 inch pieces)
1/2 cup vinegar
1 teaspoon salt
1/2 cup all-purpose flour
1/4 cup milk plus 1 tablespoon milk
2 eggs (separated)
2 teaspoons olive oil
1/8 teaspoon salt
vegetable oil
Combine cooter, vingar, and one teaspoon of salt. Cover with water; simmer one hour or until tender. Drain and set aside. Combine flour, milk, egg yolks, olive oil, and 1/8 teaspoon salt; mix well. Beat egg whites until stiff; fold and batter. Dip cooter pieces into batter; fry until golden brown in deep oil heated to 375 degrees. Drain well on paper towels.

Fuzzy Cooter
Ingredients: Orange Juice, Ginger Ale, Lemonade, Vodka, Peach Schnapps
Mixing Instructions: two shots of Vodka, two shots of Peach Schnapps, fill the rest with Ginger Ale, Lemonade, and Orange Juice to taste.
Ingredients: 1/2 oz Grenadine, 1/2 ounce Raspberry Liqueur (Chambord), 1/4 ounce Aftershock, 1/2 ounce Absolut Kurant
Mixing Instructions: Layer ingredients in a tall shot glass: Grenadine, Chambord, Aftershock and Absolut Kurant. Drink should have varying layers of red.
